Ingredients
    For the Marinade
  • 1/4 cup coarse ground Dijon mustard
  • 3 tablespoons honey
  • 2 tablespoons olive oil

  • 1/2 of shallot, diced
  • Kosher salt and freshly ground black pepper (to taste)
  • For the Chicken:
  • 1.5 lbs chicken tenderloins
  • 1 tablespoon canola oil
  • Optional Garnish:
  • Fresh rosemary sprigs
Instructions
    Prepare the Marinade:
  1. In a medium bowl, whisk together the Dijon mustard, honey, olive oil, chopped rosemary, lemon juice, diced shallot, 1 teaspoon of kosher salt, and ½ teaspoon of freshly ground black pepper. Mix until well combined. Set aside half the marinade in the refrigerator for later use as a glaze.
